  • Brewmaster -- Lazarus Brewing Co. Austin, TX 60K/Yr + Profit Sharing

    Lazarus Brewing Co. – Brewmaster

Position: Lazarus Brewing is looking for an experienced, creative Brewmaster who is ready to spread his / her wings and make a mark in one of the 7 best beer cities in America.

    Location: Austin, Texas.

Who We Are: Lazarus Brewing is one of Austin’s newest brewpubs, located on East 6th & Chicon, in the heart of Austin’s emerging beer scene. We are a small-batch, urban brewery that is focused on bringing people together through coffee, food, and great beer. We believe in Story and Adventure, and we think this is your chance to get in on a great one.

Who We’re Looking For: This is a ground floor opportunity, for a very special person. The ideal candidate will have 7+ years of full time brewing experience, with a proven ability to create world class beers, and an entrepreneurial itch to innovate and explore. Equal parts Artist and Geek, you are a reliable self-starter who can get things done. You are a Clean Freak, a Learner, and someone who is recognized as one of the best up-and-coming brewers in your city or state. Most importantly, you are able to build a high quality brewing program from the ground up: from design to implementation; from sourcing to serving and everything in between - you can make it happen. You need to be Interesting. Competent. Able to embody what we’re about.

    Key Responsibilities:
    • Help design, assemble and operate our 10 BBL Specific Mechanical direct fire brewhouse (6 fermenters, 10 bright tanks); help create a pilot system for R&D work.
    • Design and brew a wide variety of styles, ranging from “classics” (IPA, stout, ESB, pale) to “specialty” beers (Belgians, barrel aged, sours, high gravity seasonals).
    • Brew up to 1500 bbls/year for pints-on-premise consumption and package sales (750s).
    • Develop an auxiliary program for sours, wilds, and barrel-aged beers.
    • Source ingredients, develop recipes, be obsessive about sanitation and quality control.
    • Monitor yeast cell counts during fermentation and conditioning - this includes sanitary yeast handling and ability to utilize lab equipment.
    • Sample bright tanks for CO₂ levels/DO levels and measure pH on the brewhouse.
    • Develop SOP’s to monitor and enforce high standards of quality and excellence.
    • Teach, train, and mentor others in the art and craft of brewing. You will eventually have assistant brewers, but early on it’s going to depend largely on you.
    • Oversee all cleaning, sanitation and maintenance. You must excel at troubleshooting and problem solving. You must be able to work fast with little supervision.
    • Work closely with management to establish budgets, develop production schedules, monitor costs, track profitability, and ensure state / federal compliance.
    • Must interface well with public. Here at Lazarus, we exist to help people share life. And that means letting them share in our lives too. You should like people, enjoy answering questions, and look forward to participating in occasional events. We want a brewer who is willing to be a part of the community (not just hide in the brewery all day).

    Qualifications:
    • Responsible self-starter who works well with little supervision.
    • Professional degree in Fermentation Science or Brewing Technology (experience may be substituted for degree depending on range and depth).
    • 7+ years of professional experience in a brewpub or production environment.
    • Experience on multiple commercial systems, with expertise in a wide variety of skills ranging from recipe formulation to fermentation control to filtering and conditioning.
    • Intimate knowledge of classic beer styles with a demonstrated ability to brew to style as well as to push boundaries and apply innovative techniques.
    • You must be able to brew a variety of IPAs that are all exceptional. Experience with barrel ageing, sours, wilds, and high gravity Belgian/Trappist styles a huge plus.
    • We want to taste your beers, and we expect them to be amazing.
    • Ability to carry up to 55 pounds and work in a physically demanding environment.
    • Ability to weld stainless and handle basic fabrication needs a plus.

    Compensation & Benefits:
We expect a lot from our brewmaster. However, we believe this is an incredible opportunity for the right person. Salary commensurate with experience. Profit sharing based on performance. We are prepared to offer a very competitive package to the appropriate candidate.
