Our award winning suds are named after the common summer storms along the Gulf Coast of Florida.     The Assistant Brewer will provide direct support to the Head Brewer, and general brewhouse support throughout. This position provides assistance in sanitation and safety procedures, and collaborates with the head brewer on recipe formulation, yeast management, ordering supplies, coordinating distribution, etc. This position also works closely with the cellar department and QC, and provides support to those departments as needed.

    Duties & Responsibilities:
    • Perform daily duties including but not limited to: CIP, Grain Milling, Operating Brew House, Wort Transfers, Yeast Pitching. Fermentation Monitoring, Filtration, General Cleaning, and Beer tasting.
    • Prepare filtered beer for packaging.
    • Start up and shut down of packing operations.
    • Collection of QC/QA data.
    • Assist Head Brewer to train and coach all staff within the brewing facility.
    • Assist in the execution and evolution of brewhouse and safety SOPs
    • Perform minor maintenance tasks to ensure a smooth work schedule.
    • Monitor and maintain essential facilities. (i.e., Steam Boiler, Water Filters etc.).
    • Follow established procedures for cleaning and sanitizing.
    • Follow establish procedures for safe operations of all equipment.
    • Provide a safe and clean environment for brewery tours, events and fellow employees.
    • Complete OSHA required training and OSHA required polices. (i.e., permit required confined spaces, lockout/tagout, etc.)
    • Monitor inventory of brewing/filtering supplies, etc.
    • Cover night/weekend shifts and necessary overtime when required.
    • To some extent, the following may be required: forklift operations, lining and packing work, on & off site festival work, account visits, and deliveries.

    Skills:
    • Previous experience in a production brewery producing a minimum of 5,000 bbls per year strongly preferred.
    • Formal professional brewing program education and/or certification strongly preferred (aka Siebel, MBAA, ABG, ASBC, etc).
    • Knowledge of all of the following-fermentation theory/practice, biochemical/chemical changes in product from raw materials to finished product, bitterness, color and alcohol percentage assays.
    • Experience working with high speed filler, high speed labeler and other packaging line and canning equipment is ideal.
    • Desire to learn more about brewing theory and technology.
    • In-House Forklift Certified – Training will be provided.
    • Ability to continuously lift 55lbs or more, and move up to 165 lbs.
    • Must be able to work a flexible work schedule when necessary.
