    Top Cropping Wyeast 3522

    Does anyone have any experience top cropping Wyeast 3522 and if so, have you got any pointers/advice?
    I'm opening a new brewery in the next couple of months and will be brewing exclusively Belgian styles with open fermentation so will be top cropping.
