Looking for opinions on whether a 3 vessel - MT, LT, BK / WP - makes sense in a 10bbl size for a brewpub. I know the added cost will help make better lagers, hefe's and we can step mash all of our beers, but I am wondering if the 3 vessels will be wasted if we end up selling a ton of ales that could have just been single infusion mashed? You don't see many (I dont know of any at the moment) 3 vessel setups in brewpubs, am guessing there is a reason for that (I know its more expensive). I know the set up will also help in double batching - not sure if that alone is worth the added expense though.
We're a brewpub in planning, plan to sell almost all our beer across the bar. We're projecting 75% ales and 25% lagers overall.
