We have a Siemens 1200 PLC system and are in need of software - the people that put our brewery together are not providing us with the promised/contracted software. We are looking at possibly BrauKon or something similar. We have tried to go to Siemens suppliers and to BrauKon and are not having much luck. Any thoughts, ideas, contacts or experiences that may get us rolling?

You could try downloading the Siemens TIA Portal software, it offers a free trial period. After that you have to buy a license and it isn't cheap.
If you want I could look into remotely supporting the system. I have done that with GE controllers at a couple breweries.

They usually can't offer software licenses for programming software. It gets pricey to buy this software.
Look for Siemens Simatic Step 7 Basic TIA Portal.
