Assistant Brewer
Rowdy Mermaid Kombucha, LLC
Rowdy Mermaid Kombucha is a fast growing, Boulder-based, beverage startup which sells products throughout the Rocky Mountain Region. We work extremely hard, let’s face it, we can be bossy at times, but we play hard and enjoy making the best products we can.
Rowdy is seeking a dedicated long term brewer with an active working knowledge of the fermentation process (kombucha, beer, wine), proper sanitation, brewery equipment, manufacturing SOPs, and a personal challenge to understand everything about a subject or a problem.
You will be part of a small, but growing team. You will be responsible for operating kettles, pumps, filters, lifting heavy bags, measuring recipes, testing pH & acidity using titration methodology, assisting with building temperature control systems, spearheading controlled R&D experiments with our in-house biochemist, assisting in our lab, lifting heavy bags, rearranging coolers using a forklift, painting walls, cleaning floors, mixing chemicals…never a dull moment for the right problem-solver with a can do attitude.
DAILY DUTIES:
Fill and turn on kettles
Monitor pH
Monitor total acidity using titration methodology
Monitor temperature
Monitor oxidation of ethanols into acids
Oversee full lifecycle of product
Produce kombucha recipes to Rowdy Mermaid Kombucha standards
Fill out SOPs according to GMPs
Maintain brewery, inventory, and brewing records
Schedule brewing to coincide with inventory requirements and packaging
Perform monthly inventory assessment to maintain ingredients and packaging materials
Report on product forecast and brewing conditions
Maintain cooler, rotate and maintain stock of kegs, rotate and maintain pallets according to FIFO methodology
Operate equipment to maintain acceptable inventory of raw materials and product
Supervise cleanliness & sanitation of all equipment, tanks and work areas to maintain consistent product quality and a clutter-free environment
Maintain auditable environment according to GMPs
THE YOU MUSTS
You must possess good kombucha knowledge
You must have at least 4 years of commercial brewing experience
You must understand proper brewery sanitation
You must have a good sense of smell and the ability to distinguish flavors and understand when a problem has occured and why
You must be attentive to the product at all costs, including the ability to engage on weekends or week nights
You must possess a working mechanical knowledge and intuitively understand how to troubleshoot problems (fermentation & machinery)
You must be ready to be challenged by a sometimes stressful position being fully responsible for the end product
You must be a team player
You will often be required to invent techniques and equipment to get the job done at all costs
