    Position Summary

    Oversee and manage all brewing processes for the Labatt USA Brewery in Buffalo, NY (trade name TBD), a W.M. Sprinkman 10 bbl 4 vessel brew house with 12 fermenters and 8 bright tanks, designed to brew innovation beers for the Labatt USA business. Duties include raw material selection, recipe formulation, production, and quality. This position is responsible for brewery budgeting/financial planning, capacity modeling, and production of a consistently quality product. Additionally, responsible for being a primary brand spokesperson and establishing an energetic, knowledgeable presence with current and prospective customers through representation at off-site events, brewery tours, and other on-site events.

    Primary Responsibilities

    Brewery Operations

    •Conduct all brewing operations at the brewery, including: day-to-day process issues, recipe management, operating policies, procedures, release parameters, and safety policies. Plan, control and schedule resources and staff in order to meet objectives. Prepare weekly schedules for brewing, beer transfer and staffing.
    •Ensure that proper samples of raw materials, in-process, and finished product are collected and analyzed appropriately to ensure a quality finished product.
    •Ensure the cleanliness and sterilization of tanks, screens, inflow pipes, production areas, and equipment, using hoses, brushes, scrapers, or chemical solutions.
    •Lead the development of new products by creating new recipes for innovation beers and coordinated test brews. Provide operational and qualitative input for recipe development. Keep recipes updated and adjusted to meet quantitative and qualitative goals. Create product definitions and recipes, descriptions, standard costs and revision controls.
    •Responsible for comprehensive Standard Operating Procedures with full documentation for brewing and cellar operations including malt handling, wort production, fermentation, yeast handling, liquid transfer, fining, colloidal stabilization, filtration, carbonation, keg cleaning/coding/filing. Develop and revise documentation for:
    •Equipment operations
    •Cleaning and sanitization procedures
    •Safety procedures
    •Quality assurance program
    •Prioritize tasks to optimize support of the development and manufacturing process in the most cost-effective method possible.
    •Maintain detailed records of raw materials, quality checks and production stage timings. Maintain accurate brewing records. Provide daily and monthly summary and detail reports.
    •Oversee functionality and maintenance of brewing equipment, CIP equipment, water delivery equipment, and sewer related systems.
    •Approve product for release based on quantitative and qualitative parameters falling within operating and exception limits. Work with QA staff to resolve product problems. Required to elevate quality problems to senior management to ensure that no inferior product is released to the market.
    •Oversee budgets, expenditures, usage, receipts and inventory of brewing raw materials, chemicals and brewing aids, including:
    •Define, prepare and manage all associated budgets.
    •Sign and countersign purchase orders of raw materials and supplies. Approve invoices for payment.
    •Order brewing materials, brewery chemicals, and related replacement parts to arrive on time and in proper amounts.

    Training

    •Work with the Tasting Bar Manager to establish proper training procedures to ensure all beer servers are properly trained in overall beer knowledge.
    •Schedule, coordinate, and execute meetings with tasting room and other staff to ensure proper knowledge in various areas of the brewing process, beer styles, and Labatt branding.

    Customer Interaction

    •Aid in the creation of the pilot brewery tour program, as well as provide tours as defined.
    •Assist in the coordination and execution of off-site events where the Labatt USA Pilot Brewery is being directly represented.
    •Assist in the execution of on-site events that deviate from regular business, including, but not limited to, beer launch events, Brew Fests, private tastings, dinners, corporate visits, and other special events.


    Skills/Competencies/Education

    Education:

    •Short course in brewing from an accredited brewing science school or equivalent experience is required.
    •Bachelor’s degree in Brewing or related science field and/or Certificate from an accredited brewing science school preferred.


    Experience:

    •A minimum of 10 years of brewing experience required
    •Thorough knowledge of brewing science


    Skills/Competencies:


    •Advanced understanding of brewing science
    •Knowledge of raw materials and their effects on wort and beer
    •Proven mechanical aptitude
    •Knowledge of safe chemical handling, safe work operations, safety policies and procedures
    •Ability to relate well and articulate messages clearly to people at all levels of the organization and the external community
    •Ability to sell ideas to peers and senior leaders and interact well with them
    •Ability to make presentations to large and small groups and act as brand spokesperson
    •Ability to build relationships with external and internal partners and perform responsibilities in line with corporate values
    •Solid organizational and written communication skills
    •Strong computer skills to include Microsoft Office
    •Flexibility to work evenings, holidays, and weekends as business needs require

    Travel Requirements:

    •10%
    •Requires sufficient personal mobility and physical reflexes, to permit the employee to function in crowded physical conditions, climb stairs on a regular basis, stretch and reach on a regular basis, and stand for long periods of time on concrete floors.The brewery environment includes exposure to moderate to high noise levels and exposure to cleaning chemicals.
