I am wondering if anybody has brewed with any acient grains? Einkorn Emmer, Spelt, and Amaranth are a few of the varieties I am asking about. I am really interested in the Amaranth because it is gluten free. Also if no one has brewed with them, do they know if there are any places that could malt them?
