    The Fermentorium Beverage Company in Cedarburg, WI is a startup craft beer brewery and 2500 square foot tasting room that serves the craft beers made on site. If you love beer, and want to work in a fun, fast-paced environment with an opportunity to grow with a new business, we want to hear from you.

    The Fermentorium is looking for an experienced and creative candidate to serve as brewer and get involved with all aspects of brewery operations. This is an excellent opportunity to get involved with a brewery from the beginning and work in a collaborative environment to create a brand new beer portfolio with no limits on experimental concepts. We have a 20 barrel, three vessel brewhouse with a mash mixer in the mash tun and rakes in the lauter tun which allows us to do step mashes. We focus on seasonal, limited release and eventually mixed fermentation beers. We also have a 10 gallon Sabco RIMS system for pilot beers that are sold in our tasting room.

    Responsibilities Include:
    • Brewhouse operations:
    • Milling, Mashing, Lautering, Boiling, Whirlpooling, Knockout, Grain Out, and Brewhouse Vessel CIP (including Heat Exchanger)
    • Cellar-Related operations:
    • Fermenter CIP/Scrub/Sanitation, Cell Counting, Checking Gravities/Monitoring Fermentation(Incl. Glycol Controls), Capping/Chilling/Dry Hopping Schedule and Procedures, Yeast Management, BBT Cleaning and Sanitizing, Recording Fermentations, Reading BBT Levels and Recording, Checking Co2 in Beer
    • Packaging operations:
    • Carbonation of beer, Fining, Kegging, Bottling, Checking Co2 in Beer
    • Quality Assurance Operations:
    • Cell Counts, Pitch Rates, Gravity Measurements, Process Sampling, Yeast Viability Measurement, Taste Panel
    • Pilot Brewhouse Operations:
    • Recipe Formulation, Brewing, Fermentation, Packaging and Taste Panel
    • Strong communication, planning, and organizational skills
    • Actively find improvements for the beer and our processes
    • Maintain paperwork in an accurate and timely manner
    • Participate in festivals and promotional events
    • Public tours, education, tastings and interaction with brewery guests
    • Must be willing to pitch in on tasks outside your key responsibilities


    Requirements:
    • Degree in Fermentation Science or completion of brewing-science program
    • 3+ years production brewery or brewpub experience minimum
    • Experience in yeast handling
    • A self motivated, outgoing, enthusiastic and success driven personality
    • Strong work ethic
    • Team oriented but also independently driven
    • Strong problem solving ability
    • Strong attention to detail
    • Good cleaning and sanitizing abilities
    • Ability to multi-task and work in a high paced environment
    • Willing and looking to learn and grow with a startup brewery


    Additional desired skills:
    • Science/Lab background
    • Mechanical background or ability
    • Barrel/mixed fermentation/Foeder experience
    • Recipe Formulation
    • Willingness to design and administer beer pairings
    • Willingness to make public appearances
    • Willingness and ability to bartend
    • Cicerone Certification


    Physical requirements:
    • Ability to lift 55+ lbs repeatedly
    • Ability to crouch, kneel, stoop, crawl and other brewing/cellaring maneuvers into tight spaces repeatedly
    • Ability to stand for long periods of time
    • Ability to work in noisy environment
    • Ability to work in hot or cold environment for prolonged periods of time
    • Must be competent with MS Office, Google Docs
    • Must be able to enjoy making great beer




    Position reports directly to Brewing Operations Manager. Successful candidate will be involved in all aspects of brewery functions with opportunities for off-site events such as brewfests.
