Still working on a business plan here, and trying to reduce building costs as much as possible. Our environment here has stable temperatures (23C-33C, 74-92F year round), so my plot already included not air-conditioning the fermenter tank area, and relying on the glycol chiller to maintain correct temperature. Next question: Why bother with walls at all? I can understand a patio roof to keep direct sunlight off the tanks, but I'm not sure why I wouldn't just sit the tanks on a high-roof patio floor. If I go that way, what else could I reasonably put out in the same section?

I hadn't even thought about an indoor grain silo. Happen to know where two unused ones are, as well, because the Antillean Rice Milling company closed its doors two years ago and left some nice grain storage equipment behind.
Costa Rica has a pretty similar environment to Bonaire ... what is your mix of indoor and outdoor stuff?
