    Assistant Brewer
    December 2009-July 2012

    • Operate 10 BBL JVNW Brew House with an annual production of approximately 2000 barrels.
    • Responsible for all aspects of the brewing process from grain to glass (mash in, grain out, yeast pitching and collection, transfers, finished beer carbonation).
    • Worked with Microsoft Excel and Word on a regular basis to create documents for brewery production models and SOP's.
    • Trained with Head Brewer on recipe formulation, QA procedures, and ongoing recipe improvements.
    • Preformed Inventory and ordering of all raw materials and brewing supplies.
    • Represent brewery at industry functions.
    • Keg cleaning, bright tank and fermentation vessel CIP, lot's and lot's of cleaning and scrubbing.

    • Assisted in the day to day operations of the 2009 harvest under the direct supervision of the head winemaker and assistant winemaker.
    • Monitored fruit samples for Brix, PH, and TA levels.
    • Operated winery equipment such as flexible impeller pump, peristaltic pump, and pneumatic basket press.

    • Assist in the day to day operations of the 2006 harvest under the direction and supervision of the wine maker and cellar staff while obtaining associates degree.
    • Forklift operation: loading and unloading of fruit arrivals, pre-organization of lots for fruit sorting, unloading of macro-bins into hopper for hand sorting.
    • Monitor and log fermentation rates, recording data and performing additions to must and wine.
    • Cap management: punch downs and operation of pneumatic punch down.
