  • Canadian/Irish Brewer (5+ years experience) Seeking Adventure

    Hey there!

My name is Iain, and I am a brewer with over five years experience (including 1.5 years as Head Brewer), currently based in Dublin, Ireland. COVID and the pub closure had a huge impact especially on the Irish craft beer industry, and thus I am looking for my next opportunity. I moved to Europe last fall, so I am hoping to stay here to see more, although I am open to relocation elsewhere. Je parle le français un petit peu aussi.

I have worked at four different facilities (8,000+ hL, 10,000+ hL, 2,000+ hL, and 3,000+hL) using both open and closed fermentation. I have experience with American, Belgian, English, Irish and German inspired beers. I have worked on quite a few brewhouses ranging from a manual two vessel 2.5 hL up to a four vessel semi-automatic 30 bbl. This includes brewkits using direct fire, electric, heating oil jacketed and of course steam jacketed, from Criveller, DME, HikingBev, Newland Systems, Peter Austin, SK Group and Stout. My experiences also includes a variety of filtration processes and centrifuging, along with packaging in nearly every format (can, bottle, keg, key keg, cask). I have built a barrel-aging program from the ground up, and worked on process improvement in more than one facility. I have experience with bottle conditioning, force carbonation, in-line carbonation and running a real ale program.

I have managed multiple satellite facilities simultaneously, worked independently, as part of a team, and have also managed a team. I have trained quite a few cellarhands and assistant brewers throughout the years, and written the odd S.O.P. I have commissioned new equipment, re-established a QC program, and worked in tandem with a QC tech for a large facility. I have extensive recipe design experience, and have released beers in New Brunswick, Ontario, and in Ireland. I have guest brewed all over Canada, in Germany and in Ireland. I have worked with contract brewing partners, and have experience with soda production and blending, mead production, and working with co-packing partners for cider. I'm familiar with inventory management, working with suppliers, and way too many excel sheets.

I attended VLB-Berlin for the Craft Brewing in Practice course in 2015, and I am a BJCP Recognized judge that has judged regional, national and international beer competitions. I also have a few medals under my belt from regional and national competitions. I love learning new things, especially about other cultures. Speaking of other cultures, I have experience with the majority of beer yeast, wine yeast, and some bacteria. I love a crispy German-style Pilsner as much as a bold barrel aged R.I.S., and nearly everything in between. Only two hops that I am not a fan of are Fuggles and Sorachi Ace, but hey, I'm willing to compromise.

If you like the sound of this description, get in touch!

Stay safe out there and cheers from Dublin,

PS. contact to get the ball rolling
