  • British Brewer Looking for a Role in China (25-years experience)

    Hey thanks for visiting my post. My name is Neil and I’ve been brewing for 25 years. I’m a Brit whose been lucky enough to have brewed in several different countries; including France, Portugal, Bermuda, Hong Kong, Armenia and I’m now based in China.

    I’ve worked on various systems from brewpub to production brewery. I’ve held many roles from brewpub brewer to craft beer specialist for a short spell working at AB InBev in China.

    I know my way around a brewery having, dealt with most things a brewhouse can throw a you. I’ve worked with different pack types; from bottling and canning to automatic keg filling lines.

    Also, worked with DE filters plus centrifuges and know how to fine beer, to clear it too. I’ve spent the latter part of my career working in leadership positions either as a head brewer or production manager looking after brewing operations which include:
    • Hot and cold brewing processes – brewing (including dry-hopping and clarification), packaging, cleaning and maintenance
    • Brewery team training – including being involved in the hiring process
    • Recipe formulation and development
    • Raw material stocking and ordering – including assessing raw material suppliers on a regular basis
    • Scheduling staff and brewhouse operation
    • Process management and improvement – always looking at ways to improve operations
    • Equipment procurement and expansion
    • Sensory analysis – had training when working for AB InBev
    • Barrel management
    • Make sure that the team works in a safe and healthy environment – I take safety seriously
    I’ve been working as a brewing consultant since getting back to China (November 2019), after my last role as head brewer for Dargett in Armenia. It was my role at Dargett to get a new 35HL semi-automatic brewhouse up and running.

    It meant training a new team with little brewing experience from scratch so, they could run the brewhouse, centrifuge and bottling line.

    As a brewing consultant in China, I helped install a 20HL brewhouse in Yunnan for a client. Staying on for two extra months to help the team get up to speed on the new system.

    Helped scale up and formulate new recipes, teach the team to use the new equipment including a hop rocket as well as put together a cellaring program.
