    The job of the Head Brewer is to ensure Ponysaurus Brewing Company (PBC) meets its mission of producing high quality, balanced, delicious and imminently drinkable beer. This mission must be accomplished with an approach to production and product development that ensures the production team is engaged, communicating well, developing professionally and personally and remaining excited about our mission, products and their place on the team and contribution to the process. The Head Brewer is the lead recipe developer and primary steward of PBC’s beer identity and our beer philosophy. This role requires a high level of brewing knowledge, as well as a clear vision of the type of beer we want to make, where we fit in the market and how PBC should be viewed by our consumers. It also requires excellent leadership skills and a focus on communication, team cohesion and collaboration.

    The Head Brewer plans and oversees all aspects of brewing, including, but not limited to; scheduling, budgeting, inventory management, product registration, regulatory compliance, and hiring and dismissing all brewers. The Head Brewer is responsible for maintaining meticulous records of brewing data, recipes, raw material lot data and batch data for finished products along with other important information and historical data. They will interact with employees in Production, Laboratory, Sales and Marketing, as well as Ownership, on a daily basis to ensure information is clearly communicated about past, current, planned product, as well as production scheduling, workflow and long-term planning. This requires a high level of organization and a focus on clear, complete and systematic communication.

    The Head Brewer holds an important role in the company structure and chain of information between the Production Team and the Sales/Marketing Team to ensure we are producing the right beers in the right quantities at the right times. This role needs to be treated with the utmost care to ensure we are meeting supply for sales projections and our customers enjoy only the best products we can produce. This will mean long hours some days, meticulous organization and excellent communication skills to ensure brewing operations and coordination with other departments are smooth, orderly and foster a strong culture of teamwork and inclusion. The Head Brewer, in conjunction with the Head Cellarman, creates, approves and implements the procedures and processes used in the production of finished beer in a streamlined, sanitary, safe and professional environment. The Head Brewer carries out the vision for, and guides the strategic direction of our products, which is developed with input from the Head Cellarman, Sales Manager, Director of Operations and Marketing Manager with guidance from Ownership.

    This is a job for someone with mastery of brewing and recipe creation and a passion for continual improvement and exploration. In addition, this job role is responsible for fostering a strong and healthy team culture and excellent, thoughtful communication. These responsibilities are just as important as brewing knowledge if we are to maintain our vision and mission together sustainably over time. A passion and excitement about great, well balanced, delicious beer and a strong sense of curiosity is a must.



    The Ponysaurus Head Brewer:
    • Reports to the Director of Operations
    • Serves as the lead product developer for PBC beers
    • Oversees brewing operations and schedules to maximize efficiency of the brewery and use of staff time
    • Coordinates all brewery operations with Head Cellarman and Lab Manager
    • Works directly with the Head Cellarman on new product development and with the Lab Manager and Head Cellarman on quality initiatives
    • Determines commercial feasibility and financial impact of all current and proposed procedures
    • Is in charge of implementing all procedures and communicating new initiatives to brewery staff in coordination with Head Cellarman and Lab Manager
    • Coordinates facility/equipment maintenance or modification, including the replacement of equipment, with insight and coordination from Head Cellarman and Lab Manager
    • Leads a brewing staff capable of meeting/exceeding the goals of the brewery in the aspects of brewing
    • Promotes an atmosphere of cooperation and teamwork within the Production Department and the greater company
    • Ensures all brewers are being properly trained
    • Holds self and brewers accountable for adhering to established SOP's and maintaining a sanitary and micro-biologically stable work environment
    • Performs production tasks as needed to ensure smooth operations
    • In concert with the Head Cellarman, analyzes and discusses new product ideas and market opportunities with the Director of Operations and Sales Manager
    • Actively seeks feedback from the Director of Operations, Head Cellarman, Sales Manager and Lab Manager regarding ideas for product improvement and modification based on sales data, sensory analysis and lab reports
    • Actively seeks feedback from all members of the Production and Management teams on how they can improve their performance and better support others on the team
    • Works directly with the Head Cellarman, Lab Manager and Director of Operations to formulate and develop brewing policies and procedures to enhance wort quality and preserve brand integrity
    • Produces a safe working environment for employees by maintaining the facility and equipment in optimal working condition and ensuring there are clear pathways for team members to give feedback, raise concerns and have any issues swiftly addressed
    • Analyzes brewing SOPs, equipment, and the production floor regularly; making recommendations to the Director of Operations on ways to improve efficiency, quality, and safety
    • Communicates with the Head Cellarman and Packaging Manager to coordinate the movement of product from the Brewhouse through the Cellar to Packaging
    • Tracks and reports all brewing data and maintains brewing records
    • Schedules shift brewers to ensure appropriate labor is available to maintain the brew schedule
    • Oversees the maintenance and cleaning of brewhouse equipment and the mechanics involved in their operation
    • Oversees and trains all brewing staff, confirming they are performing tasks per the SOPs
    • Researches and suggests continuing education and professional development opportunities for and all brewing staff to be approved by the Director of Operations
    • Conducts professional outreach with the brewing community
    • Conducts community outreach with the general public identifying events and promotional opportunities for recommendation to the Director of Operations and Marketing Manager
    • The Head Brewer is the public face of PBC and works with guidance from the Marketing Manager to ensure the community is engaged with our product and brand to further expand the company’s sales and influence.
    • Identifies and takes advantage of strategic opportunities to enter our products in competitions and win meaningful awards
    • Conducts interviews with various media outlets, as directed by the Marketing Manager, to support ongoing or new brewery initiatives
    • Maintains brewing, cellaring, packaging and other related documentation in an organized and complete manner
    • Acts as ABC/TTB liaison, organizing and filing all necessary paperwork for product registration and regulatory compliance
    • Files all necessary excise tax returns


    How your work will be measured:
    • Meeting brewing schedules and delivering wort to Head Cellarman on schedule
    • Maintaining raw material and packaging inventory above minimum levels
    • Quality of product being released to market
    • Tracking and exceeding target KPIs
    • Creation and maintenance of a safe and efficient production environment
    • Timely and clear communication of product status across the company
    • Clear, consistent and timely communication with other departments
    • Maintaining a strong and happy team that is diverse and inclusive
    • Ongoing professional development of team members and providing opportunities for advancement
    • Participation in events and community engagement opportunities as determined by the Marketing Manager



    Work Experience and Production Capacity

    Hours will vary by week and season based on the demands of the production schedule. Experience working with different departments while wearing multiple hats is critical. Mechanical and problem-solving aptitude is a must. You must have a minimum of 3 years experience at a brewery with a minimum of 5,000 bbls annual 
production with responsibilities including production management, recipe development and sensory 
analysis. Ponysaurus Brewing Co. currently operates at ~38% of our capacity and produces ~3,000 bbls annually.


    Physical Demands:

    The physical demands here are representative of those that must be met to successfully perform the essential functions of this job. While performing the duties of this job the employee is required to stand and walk for long periods of time; use fingers and hands to reach and feel objects; talk and hear; climb or balance; stoop, kneel, bend, twist and crouch. The employee must occasionally lift, carry, and/or move up to 55 pounds in general environments with up to 165 pounds on occasion. Use of arms above or below the shoulder is sometimes 
required. Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Requires manual dexterity and ability to quickly move hand(s), grasp, manipulate or assemble. Ability to work in a non-climate controlled environment dealing with temperature extremes, humidity, and water.
