    Legal Draft Beer Company seeks Lead Brewer in the Dallas/Fort Worth area. Our brewery in Arlington is unique, with an inviting, relaxed feel highlighted by great taproom and beer garden environments. Our production is innovative as well, utilizing a state-of-the-art high-efficiency brewing system that allows greatly accelerated production and maximum variety in a reasonable work day without sacrificing quality.     Our lead brewer will have direct responsibility for crafting world class beer, working with our head brewer and production team. We are looking for a brewer with at least five years’ brewing experience who is smart, self-motivated, and dedicated to the craft. We need someone who shares our creative vision of stellar beers, an exceptional working environment, and outstanding corporate citizenship. Knowledge of other aspects of commercial brewery operations is a must, as there will be cross-training and responsibilities in all areas of production.




    The lead brewer will be responsible for day-to-day operation of the brewhouse and beer production, and will work with our brewmaster on recipe design and adjustment, production management, cleaning and sanitizing, and participating in all aspects of beer production from our 20 HL (17 bbl) High-Efficiency Brewing System through cellaring and packaging. We anticipate total production of around 12,000+ barrels in 2021.




    ESSENTIAL DUTIES AND RESPONSIBILITIES

    •Brewhouse Operations: Milling, Mashing, Filtering, Boiling, Whirlpooling, Knockout, Grain out, Brewhouse Vessel CIP

    •Cross-training and participation in Cellar-Related Operations: Fermenter CIP/Scrub/Sanitation, Cell Counting, Checking Gravities/Monitoring Fermentation (Including Glycol Controls), Capping/ Chilling/ Dryhopping schedule and procedures, Yeast Disposal and propagation, BBT Cleaning and Sanitizing, Recording fermentations, Reading BBT levels and recording

    •Cross-training and participation in Packaging Operations: Carbonation of beer, Filtering, Cleaning Kegs and Filling Kegs, Checking CO2 in beer, all aspects of packaging in canning line with 12 and 19.2 oz. cans

    •Cross-training and participation in Quality Assurance Operations: Cell Counts, Pitch Rates, Gravity Measurements, DO Measurements, Process Sampling, Yeast Viability Measurement, Taste Panel, Laboratory Analysis and interpretation

    •Effluent processing as it relates to the above operations, cleaning and organizing standards, Daily Record of Activities accurately and legibly recorded, general brewery maintenance and management as needed, and reporting to pertinent governmental agencies
    • Documentation of and adherence to SOPs, Best Practices, Safety Program, Maintenance Schedule, Cleaning and Sanitation schedule and protocol, and related items for brewery operations
    • Troubleshooting, repair, and preventive maintenance of all brewery equipment, including assistance with planning and development of schedules, processes, protocols, and checklists for same
    • Standing, walking, using computers and software, lifting up to 55 lbs., stooping, kneeling, crawling, reaching, talking, hearing
    • Visual acuity required, with or without correction
    • Senses of smell and taste crucial in assessment of beers
    • Additional duties and responsibilities as assigned




    QUALIFICATIONS

    MATERIALS AND EQUIPMENT

    •Computers and process automation systems

    •Brewing raw materials including malt, hops, water, yeast

    •Cleaning and sanitizing chemicals

    •Pumps, hoses, valves, clamps, gaskets, and other brewing equipment
    • 20 HL (17 bbl) high-efficiency brewing system, allowing faster and more efficient brewing and capability of cost-efficient expansion of production
    • 45 CPM automated canning line




    WORK ENVIRONMENT

    Characteristics described here are representative of those encountered while performing the essential functions of this job:

    •Primarily performed in operational areas

    •Environment is usually that of a brewer

    •Regularly works with hazardous materials

    •Works on wet floors and with wet equipment

    •Regularly works around high voltage, hot water, and steam

    •Frequently must work in a sanitary environment




    The ideal candidate for this position will possess exceptional skills in organization, planning, leadership, problem-solving, and social interaction. The success of our brewery will result from positive experiences for our customers and the public at our brewery and taproom. The candidate must also possess computer skills to quickly learn software systems, both in accounting and brewing. Our lead brewer must be an energetic, forward-thinking and creative person with the highest ethical standards and a single-minded dedication to the pursuit of perfection in our products. Our brewer must positively represent the brewery to our employees, our customers, government regulators, and the community. He or she must be well-organized and self-motivated, pay hawk-like and razor-sharp attention to detail, and be able to manage multiple processes simultaneously.
