    Summary
    This position manages all aspects of the beer production process and the day-to-day operations of the brewery. The Brewmeister is responsible for making purchasing decisions, meeting with customers and businesses, creating new types of beer, setting production goals and managing resources. Always provides excellent guest service.
    Essential Duties and Responsibilities include the following:
    • Manages raw material, work-in-process, and finished goods inventory control
    • Plans and manages brew schedule
    • Procurement of all raw materials and packaging supplies
    • Creates, edits, and manages brewery SOPs
    • Manages brewing logs and beer record keeping files
    • Responsible for innovation and recipe development
    • Knowledge of food, liquor, and labor cost
    • Responsible for inventory control systems and asset management
    • Responsible for brewery production cost control
    • Manages brewery staff performance
    • Oversees that beer produced meets Rolling Hills Casino’s strict quality standards
    • Makes sure that all raw materials and critical production control points meet QC standards
    • Maintains brewery premises kept clean and always organized
    • Responsible for making sure brewery equipment is kept well maintained and in excellent operating condition
    • Coordinates F&B service for inter-department functions, marketing, and special events
    • Ensures the department’s work schedule is timely and efficient
    • Reviews financial transactions, constructs, and monitors budget to ensure efficient operations and to ensure expenditures stay within budget limitations
    • Knowledge of ABC rules and regulations governing the sales and service of alcoholic beverages
    • Follows established departmental policies and procedures
    • Other duties as assigned within the framework of the Brewery and Distillery.
    Requirements
    • Minimum 21 years of age.
    • Maintaining valid licenses and certifications
    • Maintain cutting edge industry knowledge
    Supervisory Responsibilities
    Responsibilities include interviewing and training employees, planning, assigning, and directing work; appraising performance; rewarding and disciplining employees, addressing and resolving employee complaints and creating work schedules.

    Education and/or Experience
    Bachelor’s Degree in a related technical field and/or a formal brewing education from an accredited brewing program and Minimum 7 years of brewing management experience in a production brewery or a combination of education and experience. Possess and maintain proficient understanding of Laboratory Operations / Quality Assurance / Sensory Trained to measure cell health, pitch rates, ABV analysis, IBU analysis, taste and color analysis. Comprehensive knowledge of brewing and packaging equipment as well as steam, chilled water, and compressed gas utilities. Experience and capable of performing all brew house, cellar, CIP, QC, and packaging duties required. Must have strong computer skills.

    Language Skills
    Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations. Ability to write reports, business correspondence, and procedure manuals, Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the public.

    Mathematical Skills
    Ability to calculate figures and amounts such as discounts, interest, commissions, proportions, percentages, and volume. Ability to apply concepts of basic algebra and geometry.

    Reasoning Ability
    Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.

    Certificates, Licenses, Registrations
    Gaming license issued by the Paskenta Gaming Commission. TipS certification as trained at Rolling Hills Casino. Food handler’s permit from a relevant government agency. Must obtain Title 31 certification as trained by Rolling Hills Casino. Valid California Driver’s license.
