    OVERVIEW

    760 Craft Works is a family-owned brewery that’s in the final stages of construction and expects to be brewing November 2022. Our 8,000 square foot taproom & brewing facility is located in downtown Huntersville, NC, a 15-minute drive north of uptown Charlotte, NC and a 10-minute drive from the shores of Lake Norman. Our 1.7-acre property sits right on the Downtown Huntersville Greenway, part of the Carolina Thread Trail.

    OWNERS

    We are detail-oriented, mechanically inclined owner-operators with a decades-long passion for brewing and a decades-long connection to the local Lake Norman area. We are team players – no one is above any job. Our complementary experience includes leading lean clean-energy tech startup teams and managing 400-employee aluminum can manufacturing facilities producing 5 billion cans per year. We believe businesses, like communities, are defined as much by their people – their attitudes, behaviors, and shared values – as by the products they produce. We are thankful this 5+ years-in-the-making project is on the precipice of opening.     EQUIPMENT & BREWING ENVIRONMENT

    We have taken great care to design the brewery floorspace and equipment for operational efficiency, safety, flexibility, and growth:
    • 10BBL steam-jacketed mash mixer with hydrator
    • 15BBL steam-jacketed lauter tun with hydrator, pneumatic adjustable-height rakes, low rpm gear motor, manometers, wort grant sensor to auto-adjust lauter pump speed, and floor knife gate for grain out
    • 10BBL steam-jacketed kettle/whirlpool with vent stack valve & PVRV for kettle souring
    • 30BBL CLT with auto fill sensor
    • 30BBL HLT with auto fill sensor
    • Brewhouse platform with utility sink, wort sample station and overhead hose reel
    • Process piping designed to seamlessly support reiterated mashing, pre-acidifying sparge water in mash mixer, and running bi-directional HEX CIP
    • Oversized 40 HP steam boiler with full gas modulation for future expansion to include 2nd 10BBL kettle/whirlpool vessel
    • 2x5BBL, 2x10BBL and 2x20BBL glycol-jacketed FVs with space to triple capacity in the future
    • 2x10BBL and 2x20BBL glycol-jacketed Brites
    • 740 square-foot cold room with 2 forklift-friendly doors on opposite sides and 12-foot height clearance
    • Boiler, glycol chiller, brewhouse/cellar control panel, cellar solenoid valves, and cold room all backed-up by natural gas generator in event of rare power outage
    • Grain mill mounted directly on top of grist case with elevated work platform and stairs allowing brewery staff to pick grain from elevated pallet and deposit in mill hopper without lifting/reaching overhead
    • Half-barrel MLT/KWT/HLT electric pilot system
    • Low-noise rotary screw air compressor w/ air dryer and coalescing & charcoal filters
    • Premier 3-station keg washer
    • 2 HP Hyginox pump cart with VFD and splash proof pin & sleeve plug and brewery receptacles
    • Dedicated space and trench drain for future canning and packaging line
    • Brewing area has dedicated HVAC for fully conditioned, comfortable workspace
    • All brewing & cellar floors are sloped to trench drains
    • Bright, large, southern-facing 9’ x 13’ windows on street-frontage provide ample natural light into brewing work area
    • Shower in family-assist bathroom for employee use
    THE OPPORTUNITY

    The lead brewer / head brewer will work collaboratively with the owners in implementing and shaping the vision for the Company’s brewery offerings, as well as defining and refining the operational procedures to ensure consistent, high-quality product. This individual will also play an integral role in identifying and prioritizing additional capital/maintenance expenditures to drive efficiency improvements and support growth. We anticipate near-immediate opportunities for managerial growth – we expect to add additional brewing staff 6-8 months post-opening. Decades-long ardent can fans with manufacturing experience, we look forward to adding a canning line sooner than later.     QUALIFICATIONS
    • Profound knowledge of craft beer and brewing process
    • 2+ years of assistant brewer or head brewer experience in pub or production setting
    • Yeast management experience including sterile harvesting, cell counting/viability, repitching
    • Analytical, organized, and strong attention to detail
    • Intrinsically motivated, self-starter that thrives in situations requiring problem-solving
    • Team player with positive attitude and strong communication skills
    • Must have the ability to lift and move 55 lbs.
    • Able to work full day on your feet
    • Forklift experience
    • Proficient in MS Office (e.g. Word, Excel)
    • Experience with brewery management software (e.g. Ekos) a strong plus
    JOB RESPONSIBILITIES
    • Safety-first mindset must inform every operational decision
    • Milling of grains and maintenance of mill to desired spec utilizing sieves
    • Brewhouse wort production
    • Yeast pitching
    • Dry hopping & rousing
    • Yeast harvesting, serial repitching
    • Carbonation of beer to proper CO2 volumes
    • Keg filling
    • Keg washing & cleaning
    • Brewhouse & cellar CIP
    • Chemical handling
    • Forklift operation to move raw material, waste and finished product as required
    • Maintaining clean production brewing area
    • Troubleshooting and general maintenance
    • Sensory analysis
    • Consistent detailed notes & measurements for each batch of wort/beer
    • Define and refine QA/QC tests and procedures
    • Daily settlement of brewery activities in the brewery management software platform
