The Ram Restaurant & Brewery is hiring a lead brewer to join our production team in Tacoma, WA. The RAM is family owner group of 13 brewpubs in the beautiful PNW that celebrates our brewers’ ingenuity each and every day with a constantly rotating selection of seasonal creations to complement our core line up. Lead brewer is responsible for all aspects of production on our 15bbl direct fire system, seasonal creation, and inventory management. Work with Production manager on recipe formulation, yeast management, ordering supplies, coordinating distribution, taxes, inventory management, management of Ram materials and production planning.Ideal person has brewed on at least a 7 BBL system in full production and has at least 1 year on the brew deck and has working knowledge of all aspects of brewery operations and distribution.
Essential Duties
Required Knowledge, Skills and Abilities

Essential Duties
- Complete understanding of brew house operations, cellar & distribution.
- Recipe development; create award winning Ram beers; new seasonal-innovation
- Manage raw materials, inventory control, & production scheduling
- Sanitary sampling, yeast cell counts and record keeping of all beers produces
- Cellar operations including filtration, tank transfer, sanitation procedures
- Equipment maintenance and troubleshooting
- Strong verbal communication and organization skills
- Ability to work independently, as well as in a team environment
- Good understanding of quality assurance/quality control and problem solving skills and to troubleshoot any beer related issues
- Participation in events, festivals, promotions, Brewers Happy Hour, Mug Club parties
- Possess or obtain a State of Washington Class 12 liquor license (alcohol server card)
- Maintain brewery, state and federal compliance, inventory and brew sheet paperwork
- Monthly and weekly production planning
- Evaluate and monitor beer and raw materials involved in brewing
- Brews original beers according to demographics and promotional needs
- Operate brew equipment to maintain acceptable inventory of raw materials and beer
- Supervises cleanliness and sanitation of all equipment, tanks and work areas to maintain consistent beer quality
- Fundamental knowledge of plumbing and machinery mechanics/maintenance
- Possess basic beer knowledge and sensory skills to distinguishing flavors and colors in beer
Required Knowledge, Skills and Abilities
- 1+ years of brewing experience (brew pub preferred)
- Ability to work and communicate well with team, guests and outside parties
- Know Microsoft office and proficient basic computer skills
- Organized and detail oriented
- Ability to problem solve and get assistance as needed
- Capable of speaking in front of a small group of people as an instructor
