A little bit about the company:
Before the idea of Scarlet Letter existed, we were Core Brewing & Distilling Co., founded by Jesse Core in 2010, a young, eager, and hungry entrepreneur who loved beer and his home state of Arkansas. Core was founded as one of the first craft breweries in Arkansas. Brewing beers such as Arkansas Red, Toasted Coconut, and ESB, Core rose to one of the most popular breweries in the state. For over a decade, Jesse and his team trailblazed a model for future Arkansas breweries, so much so that by 2023 there were over 40 breweries in Arkansas.

By 2014, something new, and dare we say bold, was taking over the beer world. New sales data showed that craft beer was declining, and health and fitness were now driving millions of people’s beverage choices. The seltzer industry had been around for decades; however, with this new demand for holistic alcoholic beverages that weren’t high in calories or carbs, hard seltzer saw the biggest jump anything in the alcohol industry had ever seen. By 2016 brands like White Claw, Truly, and Bon & Viv were worldwide empires, and Seltzer became the new spiked obsession almost overnight.

Over the years, Core was negatively affected by a couple of things: 1) The growing number of craft breweries in Arkansas and 2) A booming seltzer industry that Arkansas hadn’t even begun to explore. Due to craft beer sales declining nationwide and untapped potential in Seltzer, Core decided to pivot, take advantage of its operations, and enter the new world of Hard Seltzer. To be clear, beer will always be a part of our culture and passion. Craft beer is the reason why Jesse left corporate America to jump into entrepreneurial life. However, as entrepreneurs must do, we were ready to take advantage of the new consumer trends. By the end of 2018, Core was transitioning to Scarlet Letter Beverage Co.

In 2023, two massive things happened within the company. Scarlet Letter again pivoted to rebranding their seltzers to “Hard Beverages” in sleek cans. Scarlet Letter also officially partnered with Sam’s Club to create Member’s Mark Spiked Seltzer. This began our nationwide expansion, as Scarlet Letter and Member’s Mark Spiked Seltzer expanded into over 20 states, including long-awaited demand in Texas, Tennessee, Florida, Louisiana, California, and Illinois. Scarlet Letter still continues to grow into new markets, and demand continues to rise. We are honored to be an Arkansas business, and while we have come a long way from an Arkansas-only craft brewery, and we don’t plan on slowing down anytime soon.

Job Responsibilities- Shift Brewer:
  • Performs the full range of responsibilities and related tasks within their assigned brewing area (Blending, Brewing and Cellaring) safely, efficiently, in accordance with SOPs, and with a focus quality
  • Works with a wide range of brewing, cellar, and filtration equipment which varies from completely manual and hands-on to fully automated and controlled with brewing automation software and every imaginable combination in-between
  • Monitors all process parameters: flow rates and volumes, process times and temperatures, pH levels, turbidity, density measures, and other parameter settings to ensure quality standards and product specifications are being met at all times
  • Performs both automated and manual CIP of brewing vessels, fermenters, heat exchangers, flowmeters, sensors, centrifuges, filters, yeast brinks, and all associated piping and valving including assembly and disassembly of process lines, loops, and vessel entry. Mixes and uses chemicals safely and with appropriate PPE in accordance with OSHA safety standards
  • Handle, prepare, and stage materials in accordance with all food safety protocols, Organic handling procedures, and inventory management practices and according to SOPs, recipes, and schedules
  • Ensures proper performance of equipment on shift; performs basic and routine maintenance and troubleshooting of process equipment, makes mechanical adjustments as necessary, and escalates maintenance issues using the work order system when basic repairs cannot be made in real time
  • Monitors and reports on product and equipment performance on shift. Based on limits outlined by SOP’s, reacts appropriately when limits are exceeded, and escalates abnormalities to Leads and Supervisors
  • Maintains an organized, sanitary, and safe work area and ensures daily cleaning and housekeeping tasks are performed in accordance with good manufacturing practices
  • Communicates effectively and works collaboratively with other brewing team members as well as supporting production teams (Management, Packaging, Shipping and Receiving etc.) regarding status of brewing processes and as necessary to support production objectives
  • Degree, Diploma or Certificate in Brewing/Fermentation preferred or
  • Any combination of experience and/or education from which comparable knowledge, skills and abilities have been achieved preferred
  • Professional Brewing experience preferred
  • Basic Mechanical Repair Experience preferred
  • Availability and flexibility to work early morning, afternoon, or night shifts, including weekends and occasional holidays
  • Solid knowledge or aptitude to learn fundamental brewing concepts: raw materials, brewhouse operations, cellar management, and filtration principles
  • Comprehensive understanding of a production environment, the physical nature of the work, and inherent safety considerations
  • Ability to accurately follow and adhere to SOPs and policies
  • Understanding of COP, CIP, sanitation and sterilization techniques
  • Basic knowledge and understanding in the areas of math, physics, chemistry, microbiology, computer skills and mechanical aptitude
  • Ability to adapt to changing priorities, meet deadlines, and work well under pressure while performing time sensitive tasks
  • Ability to work with both automated process interfaces and manual brewery operations is strongly desired
  • Ability to maintain a high focus and attention to detail while managing multiple, simultaneous tasks is essential
  • Forklift Certification within 90 Days required
