    Palmetto Brewing Company is seeking a full-time Cellarman / QC Speciailist hybrid in our Charleston, SC location. The ideal candidate will have 1-2 years of professional microbiology lab experience, and/or academic experience in a microbiology field or setting. Previous brewery work is desired but not required.

    About Us

    Located in downtown Charleston, Palmetto is proud to be South Carolina's oldest brewery; opening our doors in 1993 as the first licensed brewery to open in the state of South Carolina since the fall of Prohibition. In early 2018, Palmetto was acquired by the Pyatt family and merged with Catawba Brewing Company of North Carolina. Catawba Brewing Company developed in parallel with Palmetto, with both companies developing very similar cultures and values as they each grew within their respective markets. The company maintains 4 production facilities located in Asheville NC, Charlotte NC, Morganton NC, and our sunny Charleston SC. The brewery operates on a 25bbl 3 Vessel Brewhouse, with multiple 25bbl, 50bbl, and 100bbl tanks.

    Job Description
    • Execute lab testing of Work in Progress beer, packaged beer, and brewery sanitation. This includes but not limited to: yeast count/viability, wort stability, brewing water chlorine and pH, wort O2 levels, ATP scores, DO and CO2 readings.
    • Assist in all cellar activities including tank CIP, filtering, dosing, carbing, and fermentation monitoring.
    • Monitor, record, and evaluate brewhouse and cellar efficiency and performance. Identify and suggest improvements for all brewhouse processes including daily monitoring of brewhouse extract efficiencies and remediation of actual or potential quality.
    • Become familiar with and follow all Catawba Valley Brewing Company Standard Operating Procedures
    • Assist Head Brewer and Quality Control Manager in completing brew house and cellar testing.
    • Complete certification and training including Safety and Chemical Safety, Fork Lift, Confined Space Entry, Lock Out/Tag Out, and Emergency Evacuation.

    A passion for and knowledge of craft beer
    Strong verbal, written and interpersonal skills


    1-2 years of professional microbiology lab work (Academic experience considered)
    Understanding of the beer brewing process and general brewing science
    1-2 years of cellaring/brewery experience (strongly desired)

    Compensation / Expected Workload

    Hourly rate based on experience, with an average of 40-45 hours a week. Predominately on a 1st shift basis, with rarely but some second shift (afternoon/evening) work.
