The Brew Hub, located in Lakeland, FL is looking to fill a cellar person position in our state of the art, 100 bbl facility.

Cellar Person:


Experience in brewing, cellar and filtration/finishing operations in a production brewery producing greater than 500 barrels annually is preferred, but we are willing to train the right person. Experience managing cellar, fermentation and finishing process for multiple beer styles and complex fermentation processes and the ability to work in a multi-shift, production brewery environment is a plus, must possess a professional, positive attitude and excellent communication skills.

Position Overview:

The cellar person will be responsible for managing cellar, fermentation and beer filtration/finishing operations for each beer style utilizing automated brewing and production equipment. The cellar person will also be responsible for communicating and coordinating with other plant employees.


Proven skills in tank cleaning and sanitation, cellar operations, fermentation and filtration while producing the highest quality craft beers are a plus. The candidate will have the capability to communicate and coordinate with other brewery departments and employees to achieve quality and productivity targets, and the ability to adhere to Brew Hub SOP’s, Quality and Safety standards.


• Work with Lead Brewer, QA/QC technician and Packaging to consistently transfer, ferment, and finish beer styles in accordance with production schedule, Quality Assurance, and sensory targets.
• Execute cleaning and perform preventative maintenance on cellar, fermentation and finishing/filtration equipment.
• Utilize brewery management system to plan, execute and record results during brewing.
• Perform beer transfers
• Dry hop tanks
• Grip and manipulate tri-clamps, hoses, valves, etc. on a regular basis
• Work safely within tight spaces and with various cleaning/sterilization chemicals
• A strong mechanical aptitude is a major plus
• Centrifuge experience is a plus but not necessary
• All cellar work to be completed with an eye towards low DO
• Gravity and extract analysis and recording
• pH analysis and recording
• Gravity adjustments
• Volume adjustments
• Recording all data to cellar sheets, database, and business software.
• Maintaining fermentation and cellar cleanliness and housekeeping.
• Work with and report any mechanical issues to maintenance manager and/or supervisor
• Ensure quality and consistency of barrel aging protocol
• Operate a fork lift safely
• Assist other employees as necessary
• Participate in the occasional beer festival or brewery event
• The person filling this position must be willing to work flexible schedules
• Completed duties in compliance with company policies and standards.
• Other duties as assigned by the management team of Brew Hub, LLC.
