Overview: Texas Ale Project recently reached our first year of full production! Located in the Design District of Dallas, Texas. We have an ambitious, smart leadership team, and we are looking for an intelligent, experienced Cellerman/Brewer to help us run brewery operations. We strive to produce consistent, high quality craft beer, we are proud of our Texas heritage, and we work hard. The right person for the job is eager to help, learns quickly, already brews excellent beer, has a solid education and is a HOSE CLAMP NINJA.
This isn't an opportunity that comes along every day. The Cellerman/Brewer position is one of high visibility, autonomy, and potential for growth with the company. You’ll work closely with the Brewmaster to operate our 30 bbl. 3-vessel system and actively participate in cellaring, packaging and cleaning duties. At Texas Ale Project, you’ll have a unique opportunity to learn from a very experienced team to fine tune your brewing skills.
Daily/weekly duties include but are not limited to:
• Follows production schedules & actively participates in brewing, transferring, packaging, and cleaning
• Assists the Lead Brewer with any brewery production duties as requested. I.e.:
o Take readings and monitor beers in production
o Maintain up-to-date records for each batch
o Operate fork lift, pallet jack, and other equipment
o Set up equipment maintenance and cleaning guidelines
o Implement a detailed cleaning schedule
o Clean and prep brew house, cellaring tanks, mill room etc. according to set procedures
o Assists in stocking of raw materials and supplies
o Assists with lab duties & yeast management
o Brew pilot batches
o Package finished beer and accurately record inventory
o Maintain equipment & schedule maintenance as requested
• Maintain stock / transfer kegs to T.A.P. Room cold storage weekly
• Keeps logs of all batches and packaging completed, records losses & actuals
• Participate in production planning meetings and other meetings as requested
Other duties include but are not limited to:
• Help prepare for and participate in on-site and off-site events as requested
• Collaborate in the development and refinement of recipes
• Minimize beer loss and maximize brew house efficiencies
• Participate in inventory reviews
• Prepare new kegs for use
• Give brewery tours
• Develop, promote and communicate brewery safety procedures
• Communicate problems / challenges in the Assistant Brewer’s area of responsibility to Management and Owners as appropriate
• Make recommendations for improvement, and execute approved process/procedure improvements
Requirements:
• 1-2 years of prior brewing experience with a manufacturing brewery or brewpub w/ packaging experience
• Prior experience as an Cellerman/Brewer on a 30 bbl. (or larger) system preferred
• Has a brewing education
• Strong attention to detail and sanitation
• Superior math and Excel skills
• Willing to clean and roll up your sleeves around the “house”
• Collaborative
• Strong communication and leadership skills
• Positive attitude
• Problem solver
• Ability to lift 150 lbs. +
• Willingness to work late evenings and Saturdays on occasion
• Start-up experience is a plus
