    Assists Distiller in performing full distillery operations—soup to nuts. This includes time at the still, as well as supporting the business away from the still (barreling, bottling, inventory, etc).

    What You'll Do:
    • Assists Lead Distiller on production of spirits with a focus on quality and consistency.
    • Responsible for packaging/bottling process of all distilled spirits.
    • Tracks, inventories and logs all phases of the production process to facilitate the
    • efficient, orderly and timely filing of all Compliance and Regulatory Reporting.
    • Assists Lead Distiller to maintain inventories of ingredients and supplies to meet all deliverables in a timely manner.
    • Assists the Lead Distiller with the imagination and development of new recipes and products in conjunction with Dogfish creative team.
    • Performs the full range of responsibilities related to distilling and aging operations, including all related tasks and use of equipment in a safe, efficient, SOP-compliant and quality-focused manner.
    • Supports departmental initiatives and standards with regard to sanitation and
    • housekeeping.
    • Maintains strong working knowledge of equipment and systems operations; advises Lead Distiller of process concerns.
    • Enforces and adheres to all safety regulations as required by the position and
    • department and company safety policies.
    • Partners with the Compliance Analyst to track and accurately complete required
    • documentation for appropriate agency filings and other reporting; understands and adheres to applicable local, state and federal guidelines.
    • Ensures spirits are distilled as scheduled, per SOP and recipe specifications and adheres to Quality specs throughout operations to achieve the highest levels of efficiency, consistency and quality for our customers.
    • Learns continuously through various departmental training initiatives; demonstrates training assimilation, may perform process and procedure training to others as requested by supervision in accordance with departmental standards.
    • Maintains daily production logs.
    • Fosters positive working relationships and good communication between Dogfish departments and companies.
    • Performs other duties as assigned.
    What We're Looking For:
    • Associates of Science Degree
    • Minimum 2 years progressive commercial spirits distillation experience.
    • Must have an understanding of distilling and brewing science
    • Working knowledge of brewing and distilling equipment and systems with an emphasis on practical brewing/distilling techniques aimed at quality and flavor.
