Ponysaurus Brewing is located in the heart of Durham, NC. We are an established brewery that has been around for the last 5 years, brewing 2500+ barrels a year. We take pride in the product we produce, and through extensive QA/QC we strive the create the best beer we possibly can. We are looking for someone who can be a team-player, as well as work independently, someone who takes pride in their work, and has a passion for craft beer. This person will be working 25-30 hours a week, duties will range from Cellar work, Lab, and some occasional brewing.

The physical demands here are representative of those that must be met to successfully perform the essential functions of this job. While performing the duties of this job the employee is required to stand and walk for long periods of time; use fingers and hands to reach and feel objects; talk and hear; climb or balance; stoop, kneel, bend, twist and crouch. The employee must occasionally lift, carry, and/or move up to 55 pounds in general environments with up to 165 pounds on occasion. Use of arms above or below the shoulder is sometimes required. Specific vision abilities required by the job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Requires manual dexterity and ability to quickly move hand(s), grasp, manipulate or assemble. Ability to work in a non-climate-controlled environment dealing with temperature extremes, humidity, and water.
Hours and Working Expectations:
Hours will vary by week and season based on the demands of the production schedule. Start and end of days may vary from early to late based on needs. The Production Employee will work closely with the Production Managers to ensure only quality beer is produced and sold by Ponysaurus Brewing Company. The Production Employee will see the product through the Cellar with the utmost care and the highest attention to detail. You must be independent, organized, and clean, with excellent documentation and communication skills. Maintaining a clean, sanitized, and sometimes sterile working environment is key and diligence in clear communication with other cellar staff is a must.

The duties include, but are not limited to:
- Performs daily cellar work on fermenting and conditioning product, documenting all actions in Ekos Brewmaster according the SOPs
- Yeast Management – harvests and washes yeast, updates yeast database
- Fermentation monitoring – gravity/pH samples (when necessary), temperature monitoring and adjustments, and cold crashing product when ready
- Clarifying– dosing with pre-determined rate of clarifying agents, clarifying agent dosing trials as needed, monitoring progress of clarity of product
- Carbonating of product - carbonating to desired volume as designated by the Head Cellar Person, monitoring and testing carbonation levels
- Measure gravity, pH, and yeast in suspension on all fermenting beers daily
- Ensures product is seen through the brewing process in accordance with the goals of and to the specifications of the Head Brewer
- Milling in, wort production, yeast pitching, gravity/pH samples, temperature monitoring and adjustments
- Performs cleaning of all brewhouse equipment and brewhouse floors
- Tracks and reports all brewing data to the Head Brewer on brew days, in Ekos and Brewday Checklists
Qualifications Required:
- 1 year experience in a production brewery or formal brewing education is preferred, but not necessary
- Must be willing to work a flexible schedule
- Strong work ethic, attention to detail
- Meticulous cleanliness, with an endless drive for structure and organization
- A work ethic aligned with, and supportive of, a high growth organization
- Proficient verbal and written communication skills
- Mechanical and problem-solving aptitude
- Solid working knowledge of the beer and brewing industry
- Ability to work in a fast-paced environment while maintaining safety and quality standards

- Forklift certification is preferred, but not required
