    TITLE: Line Cook

    LOCATION: Los Angeles, San Diego, Santa Barabra & Anahiem- CA, Portland-OR

    STATUS: Full & Part-Time, Non-Exempt

    REPORTS TO: Kitchen Manager


    The Line Cook reports to Kitchen Manager and is responsible for accurately and efficiently preparing all line items to the specifications set forth by the Modern Times Beer recipe guidelines while executing every ticket with consistency, recipe adherence, and quality control while focusing on preparation, plate presentation, and timeliness. Candidates must share Modern Times’ commitments to quality, safety, business ethics, and continuous innovation.

    • Coordinate food orders to support timely and efficient delivery to each table
    • Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist
    • Accommodate special guest requests while ensuring the same high-quality standards
    • Operate ovens, stoves, grills, microwaves, and fryers
    • Test foods to determine if they have been cooked sufficiently
    • Efficiently run your station during the shift
    • Setup and break down workstation
    • Wash and disinfect kitchen area, tables, tools, knives, and equipment
    • Maintain inventory of produce and ingredients
    • Maintain complete knowledge of correct maintenance and use of food serving and preparation equipment
    • Manage kitchen supplies and overall kitchen cleanliness
    • Keep team abreast of any kitchen needs, including broken or new equipment needs
    • Work closely with the team to make sure all kitchen logistics are covered for upcoming events and anything returning from events is properly inventoried, labeled, restocked, or discarded
    • Approach all guest and employee encounters in an attentive, friendly, courteous, and service-oriented manner
    • Responsible for food safety and food quality within the kitchen
    • Follow food handling and sanitization standards
    • Ensure work station is clean and organized at all times
    • Ensure uniform and personal appearance are clean and professional
    • Have a clear knowledge of all products offered by Modern Times
    • Complete opening and closing duties as assigned
    • Be a team player and able to interact with all levels within the organization
    • Adhere to and enforce all applicable local, state, and federal laws, rules, and regulations
    • Other tasks as needed

    • Must be 21 years of age or older at the time of application
    • Able to pass a post-offer, pre-employment background check
    • Minimum of 3 years’ high-volume kitchen experience required
    • Minimum of 1 years’ customer service experience required
    • California Food Handler Certification required
    • LEAD Certification preferred
    • Graduate of a culinary institute, military school, or formal on-the-job training preferred
    • Knowledge of event catering operations
    • Able to maintain complete knowledge of all cooking techniques required to prepare menu items
    • Trained in knife skills and basic kitchen equipment
    • Must be comfortable working in a team environment
    • Able to quickly assess and prioritize needs
    • Thorough attention to detail and desire to take initiative
    • Must adhere to company’s policies and procedures
    • The desire to work in a fast-paced, growing company

    • Up to 10% travel time may be required

    • Able to work nights, weekends, and holidays
    • Personal Protective Equipment (PPE) may be required when performing work duties
    • Able to stand, walk, and be on your feet for prolonged periods
    • Able to regularly twist, turn, kneel, climb, stoop, bend, crawl, lift and carry supplies and equipment weighing up to 55 pounds using appropriate techniques and tools
    • Able to safely navigate the small areas and crowded spaces
    • Able to maneuver packages of any weight above 75 pounds with appropriate equipment and/or assistance
    • Able to move 165 pounds, using appropriate techniques and tools
    • Able to both work and thrive in a high-stress environment that has a quiet to moderate noise level
    • Able to read and follow written English instructions
    • Able to safely navigate the tasting room and snack bar areas, including crowded spaces
    • Able to work in a factory/production environment that may be loud, slick, humid, cold, and hot
    • Able to work in indoor and outdoor environments with moderate noise and occasionally slippery floors
    • Able to comply with and enforce all health, safety, and personal hygiene policies and standards

    Modern Times began as a 30bbl production brewery in the Point Loma neighborhood of San Diego. Modern Times is named after a beautifully crazy utopian community founded in 1850, and many of our beers are named after real utopian experiments or mythological utopias. Today, we're distributed throughout California, Nevada, Arizona, Maui, the Pacific Northwest, and select international markets. We operate a tasting room at the brewery and San Diego’s North Park community and opened brewery/restaurant locations in Portland, Los Angeles, and Encinitas in 2018, Santa Barbara, and Oakland in 2019 Anaheim in 2020. We brewed our first batch on May 18th, 2013; our beer went on tap for the first time on June 24th, 2013; we held the soft opening for the Lomaland Fermentorium tasting room on August 9th, 2013; and our Grand Opening was September 7th, 2013.

    In the summer of 2017, we became California’s first-ever employee-owned brewery, with 30% of the company now owned by our employees and the goal of 100% employee ownership in the future. We think that’s pretty radical.
