We are currently putting together feasibility planning for our New Brewery and are hoping that we can get some help from out fellow Brewers regarding projections of Production. I understand this changes a lot depending on many factors, but we thought we might be able to learn from others who have already been producing commercial craft beer for a while. In particular I'm hoping to get some idea of percent of sales by month over the year to try to determine what might be seasonal variations. We have put some projections together making the assumption that September thru December would be busier with Festivals, Events and Holiday season sales. June and July higher because the weather is hot and cold goes done well. Any help and experience would be appreciated. We are just looking for base lines and understand projections will become more accurate with continuing Sales history. The brewery is in a major city in Texas if that helps.
