  • Rinsing after Sanitazing

    Hello and sorry for my bad english. I am looking forward if any of you are rinsing with water and a "soft" acid (citric for example) after the sanitizing with peracetic acid for avoiding any oxidation at least with finished/filtered/centrifuged beer. What kind of filtering do you use for cleaning water?

    Providing you drain the tank out thoroughly, or flush the pipes out after sanitising, then you are probably as well off NOT rinsing. Unless you can guarantee your rinse water is completely sterile at the point of use, then you are more likely to introduce infection. Citric acid serves no real purpose under these circumstances except to waste your money. If you are concerned about hard water scale building up then you should be using a correctly formulated detergent, suitable for your water hardness, and or an acid rinse before the PAA.

      Since we are working c/o a wine cellar we know that citric is a slight antioxider but I've got your point.
