I am thinking about having a fermentor built by a local engineering firm. Does anyone know how the inside of a jacketed fermentor is laid out? I assume there are 3 sheets of stainless steel. The inside, another row for glycol, and the outside. I assume there is insulation between the glycol and exterior of the tank?

There are lots of different designs for fermenters.
Make sure your fabricator can do boilerwork...this is a pressure rated vessel, and needs to be built by a bonded fabricator.
The dish top and manway are available from Cherry-Burrell, Spadoni, or a host of other suppliers. The cooling dimple jackets are fastened to the inner shell, which needs to be finished properly, and then it is insulated. Most people have tanks with a stainless outer shell, but anything will work. I once used fermenters that had FRP shells and they were excellent. Very easy to keep clean...
Personally, I wouldn't have a fabricator that hasn't made jacketed tanks make a beer tank for me. A mash tun or kettle, maybe, but not a fermenter.
