    We make an apricot almond cider.. we have used an extract before that we can't get anymore... What are pros and cons of using just bitter almond oil... It's way cheaper than the extract, and it seems all extracts are made from it

    My immediate thought is that it is oil, and therefore will not blend into your beer. Some flavorings are water soluble and some are fat soluble. Beer needs water soluble flavorings, as you never want oils in your beer (aside from hop oil).
