    Hi,

    What are your opinions on introducing diastaticus as a saison strain in a brewery where beer is not filtered, nor pasteurized? It would be for one brew in total. I have good faith in our cleaning regime; steaming CCT's out is not an option, hot caustic is.

    We do, but we tear everything down in between uses (I mean everything.)
