    Stupid Question. I have a couple double brew length fermenters, but I don't always double brew into them. As I was adding a spunding valve to a single brew lager I brewed on Tuesday, I got to wondering, was that enough time to fill the large head space (25hl) with CO2? Up to this point I just had it bubbling into a bucket of PAA as normal, been kicking along since Wednesday. I wouldn't normally spund so early, but have to be away for a couple days..

    Am I just being paranoid about possible oxidation? Any thoughts?

    The headspace should be purged of oxygen OK. The biggest problem will be that the increased headspace will not enable pressure to build up anything like as rapidly as normal, so you may well not get the level of carbonation you would normally get from a double brew.
