How to ensure all yeast is dead before canning when you don’t have the ability to filter or use of a centrifuge?

One simple answer: don't.
We're a relatively small operation, but we can without filtration, a centrifuge, or pasteurization. As long as fermentation is complete and you've got no infections you should have a product that's shelf-stable for several months, though we do encourage customers to "keep cold, drink fresh."
