    Hi All,
    I'm doing my first coconut porter, and from my research looks like my best bet is toast the flakes(6lbs in 2.25bbl) and hang them in the fermenter towards the end of fermentation and until I like the taste.

    If thats all good, my question is the toasting part. I have no way to toast at the brewery, so can I toast at home, then store them in something and bring to the brewery later? My main concern is sanitation.

    Most folks I know just purchase it already toasted from Nuts.com:

      That sucks, the pre toasted was just a few items down from what I purchased from Nuts.com Well too late now, I need to know how to keep them sanitary from the time I toast them at home to when I use them the following day.

        Place the coconut in a paper bag and bake at 70C for 40min. Close the bag well and go to the brewery with confidence and slo motion.
