    I'm told it's possible to achieve biotransformation without fermentation with the right temp and ph in the production of hop water. Thoughts? Is it really biotransformation if there's no fermentation?

    Well, there's enzymes in hops, and for all I know they include (some of) those involved in "biotransformation". That said, glycoside hydrolysis will probably proceed (slowly) without any "bio", in the right conditions. Although of course, you can add enzymes to help out. If that's your thing.
