  • Vanilla Extract Question

    We're brewing a porter today that the higher ups want us to add coffee and vanilla to. I was thinking about going the vanilla extract route instead of whole beans. We're working on a 3bbl system and hoping to get a around a 6% beer. Any suggestions on how much extract we should be using for a batch? I was thinking a gallon would be a good place to start. Just looking for some advice before I order any. Looking to pick it up from here:

        Grab a 12oz bottle of a similar beer(yours or a different brewery) and add 3.5mL, thats about the level you are looking at with 1 gallon in 3bbls. I think that would be major overkill.

          We use 12 ounces of it in a 7bbl batch of a chocolate coffee stout with peanut butter. Definitely there but not overpowering. Best thing is we can just add it to the fermenter with the coffee and call it done.

            I chop up whole bean, 2 per Bbl, and soak in about a tblspn of vodka. Throw it in at end of fermentation .Very subtle.
