  • Adding lactose before packaging

    Due to logistics trouble we went ahead and brewed 30HL of milkstout without having lactose on hand. We now have to add 30kg post-fermentation. Any ideas on how to this best and most hygienically? I have never tried working with lactose outside the kettle, so any help is appreciated.

    I would mix the lactose in water or malt at least 180 stirring or whirlpooling well to make sure it is all dissolved. You then can either put it into a keg and transfer it to what I assume will be your brite tank or mix as stated dump it directly into the brite tank purge the tank with CO2 then transfer your beer like normal. I do the second one quite often when I make lemongrass wheat
