Looking for someone who has added spices/herbs/hops to hard apple cider.
Have some apple juice that has a pretty low malic acid content, compared to previous batches.
Hesitant to start adding malic acid to the cider, in case I overshoot the acidity.
Suggestions on what I could use?
I think lemon peel, ginger would work.
I am also thinking of dry hopping the cider after fermentation.
Any new varieties that have a nice floral quality to them. Want to avoid the tropical or pine character.
