  • Dried Orange Peel converted to dried orange zest

    We are a small 10bbl Belgian style brewery for the last 5 years. I would like to move away from using dried orange peel (which contains the pith and in lighter beers can display a pith bitterness) to using dried orange zest. Does anyone have any experience in trying to do recipe conversions? Like 1 OZ of dried orange peel = ?OZ of dried orange zest.
