removal of commercial carpet

Beginning work on a new venture and need to tear out old commercial carpeting that has been glued down.

I know that there is adhesive under the carpet. About 6k square ft.

What is the best and most recommended way to remove the adhesive and prep the floor for the new coating?

What is most recommended for brewery floors as well as customer walkways that would not see brewery traffic?
