    We recently brewed an imperial stout that comes it at just over 9%. We plan on aging in kegs for at least 3 months in kegs in the cold room at 38 degs. My question is in reference to carbonating. I thought I remember hearing that some hold off on carbonating until after aging while some carb as normal, then let it sit for months/years after carbed as normal. I cant grasp why carbonating later will have any benefit. Thoughts? Thanks
