    after an hour we start raising the mash in steps leaving it at between 158 and 162 for at least 30 mins for better head retention and then take it up to about 165 before I turn the valve to divert flow to the boil kettle where I then slow flow down to around 1.75gpm and begin sparging. It takes a while but nets us a consistent 85%

    I can take some and send you but we have the 3bbl sungood kettles which are the same ones they make for stout to resell.
    I use a custom RIMS I made with 2 36" long 5/8 diameter stainless cartridge heaters which are only 1800w each making the rims 3600w and just over 6 ft long (Its in a u shape mounted horizontally on the wall.) I use a riptide pump which we dial in at between 4 and 5 gallons per minute flow rate. I get about 4-5 degree rise in one pass out of the wort depending on if the speed is at 4gpm or 5 gpm. I use a flow switch plumbed in to kill the rims heat if flow drops below 3gpm for safety which we really dont need with these elements being such low watt density. In fact the elements are still clean when I pull them out to wipe them off after brewing. the heat applied is gentle much like a herm only without the HUGE time delays and restrictions that a herms imparts at this size.
