    So I have been in the planning stages for some time and I am looking to purchase my equipment for a small start up. I have a 155 gallon dairy tank right now that I picked up cheap. My intention is to make it into a mash tun. So I was thinking. I could purchase two 75 gallon kettles, one of those with a false bottom. Effectively these two kettles would give me a 1.5 bbl system. Now my thought for expansion is to get a false bottom for the dairy tank and mash in the dairy tank and have two brew kettles giving me a 3 bbl system (mash in the 155 gallon dairy tank and simultaneously brew in the two 75 gallon kettles). Now this would leave me with the 1.5 bbl for experimental stuff and seasonal stuff.

    Would this be an sound plan or am i better going to a 3 bbl kettle from the start and using the mash in the dairy tank and brewing with a 3 bbl specific kettle. My concern with this is i might end up with a lot of beer i cant sell at first if i start with 3 bbls.

    If you bought the two 75 gallon kettles you would be able to squeak out 2bbl with it. We brew on 55 gal and get 45 gallons of finished beer consistently.

    You definitely want have as big of a brewing system as you can right away. There's no reason to limit yourself and spend extra money in the process. Beer sells itself, your not going to have a problem with too much beer.

      ok just so we are on the same page.. what you are saying is with two 75s going i could squeak out 4 bbl then? Essentially instead of doing a double batch back to back i can do a double batch in one session while mashing in on the 155 gallon dairy tank.

        That would work if you recirculate the wort through the two kettles to mix the mash proceeds properly throughout the boil

          sorry, no i was just correcting your numbers for the 75 gallon brew kettle. But yes that would be very possible.

          I'm suggesting go with option B, get a matching brew kettle to your dairy tank mash tun, and go the less expensive, less complicated route in the long run. Dont worry about too much beer.
