    We're in planning stages of moving our brewery to a new to us location. It's an old bowling alley in an old building. I assume every municipality has different fire rules and regulations but what I would like to know is if you had to sprinkler your brewery when starting up. The building is two stories and 17000 sq ft. We want to use about 2000 sq ft for the brewery on the basement level and maybe in the future expand into a brew pub upstairs. Thanks for reading.

    You will definitely want to bring on a good architect for this. We had some of the same issues and building codes can be "interpreted" in many different ways. The need for sprinklers will be determined by occupant load and square footage of the fire space. I learned a lot in our process but mostly I learned the value of an architect. They will also help you with fire exits and ADA compliance. Every building department is different and delays are measured in weeks and months when they don't agree with your plans.
