    I am comparing several 2 row mills for our 15 BBL system. All the mills I have seen have fluted rollers. Is it correct to assume that more grooves per inch and larger rolls will make a more gentle crush. I have seen one with 7 grooves per inch on 10 inch rolls and another with 10 grooves per inch on 11 inch rolls.

      Larger rolls do equal better crush. And more flutes usually equal less deep flutes and a more even crush. Go for larger rolls/more (and shallower) flutes. Many mills are not made specifically for brewer's malt. Many are for corn or other agricultural products with a different required crush. Try to find something that is either made with brewers in mind, or else a mill that others have had good luck with.
