    Well, heck. It works!

    Just wanted to thank Phillip for his ideas on not venting. I had always carbonated with head pressure as a home brewer and vented as a commercial brewer. What Phillip was saying started to make a lot of sense for my setup, so i tried it and it worked like a charm.

    The only caveat i can think of is that i'm doing everything, start to finish, in a unitank. The beer is not being transferred to a bright tank so there's no risk of picking up oxygen, therefore no need to scrub and vent with co2. If i were using a bright, then perhaps i'd vent for a bit then shut it down for the rest. How much venting in that scenario would be proper, i don't know. Maybe someone can let us know that score.

    I start carbonation very gently, stepping up the carbonation pressure bit by bit while doing some other tasks, and wind up with the appropriate head pressure according to desired volumes of co2. Simple and works great.
