    I posted this topic on the AHA's Forum in the 'Going Pro' section, but thought I'd post here as well to gain some broader perspective.

    I know there have been cautionary statements posted elsewhere on the forum regarding inspector approval for 'homemade' or 'constructed' kettles. However, with all of the nano startups using banjo burners, Sabcos and the like, I can't help but think it wouldn't be that difficult to get approval as long as you're above board with the inspector and you've made honest attempts at understanding their viewpoint and the relevant codes.

    So, herein lies the question: on a scale of 1 to 10 (with 10 being the hardest), how difficult would it be to fit out the tank below as a brew kettle (steam or direct fire - direct fire preferred)?

    Here are some specs:

    - jacketed and insulated
    - four zones
    - 324 gallon

    It's been suggested to use this as a mash tun. While a possibility (and may very likely be the future life of this bad boy), I'm interested in any thoughts as a kettle. Thanks in advance for any pointers and tips!
