Hey yall, I have just been federally approved and am waiting on my state approval. I have a couple questions about the Records necessary for the TTB as stated in their "New Brewery Operations" Manual. First of all, how often do each of these need to be done? Would Daily Records include Everything done in one day:brewing, transferring, packaging? Does the record of balling be done per batch or on a time scale? Does inventory records mainly include raw materials, fermenting product, conditioning product, and packaged product? What is unsalable beer and how do I record that? What exactly is beer concentrate? High Gravity brewing?
I read through the codes and it just doesn't make sense what is necessary and what is encouraged to record. Any advice would be great. Thanks yall.
