Any words of wisdom for rates to charge for lagering? I am getting a bit of interest in utilising some spare capacity at our brewery and everyone wants to produce lagers. Two weeks tank time for ales is one thing, but 28 days lagering to condition away sulphur notes seems to require some different thinking. I am looking at a day rate for tank rental during lagering and wonder how other breweries that offer contract services are dealing with this.
