    The welder and I are in the final stages of assembling a 2.5 bbl brewery. I will be fermenting in open 100 gallon slant bottom vessels.

    Currently, they have only the drain at the lowest point of the angled bottom.

    My question is, where would be the ideal locations for a racking port, or inlet port? I'm not sure how high above the bottom to go, and would hate to have to reweld later. OTOH, I don't want to leave a lot of waste behind when racking off into serving vessels.
    Any guidance is much appreciated!

    Also, Is it best to pump chilled wort into the top of the vessel, thus aerating it? I'm thinking this would be fine, please correct me if I am wrong.
