  • Hop combo for Spruce tip DIPA

    Hi, we're working on a new DIPA with spruce tips we harvested ourselves and want to combine 3-4 nice piney and citrusy hop varieties to harmonize with the lemony spruce flavor. I am considering just using Chinook, Simcoe, and Mosaic, while my boss suggests also throwing in Sorachi Ace. Is there anyone who has experience with combining Sorachi Ace with Simcoe or Mosaic? I think the hop profile will get too muddled with the dill/woody/earthy flavor of the Sorachi but he says the lemon tones will come to the fore. Also, will 15 kg spruce tips have enough of an impact on flavor in the whirlpool? Advice?

    Cascade, Chinook and Citra are my go to choices for IPAs. Cascade for bittering and body would accentuate the Spruce Tips, a small amount of Citra at knockout to support the Chinook that I would dry hop for aroma. JMO
